Chocolate cherry cupcakes

One of my colleagues is leaving my team for pastures new, and today was his last day in the London office so I baked him (and the rest of the London team) some goodbye cupcakes. Not for the sugar-averse with their pot of cherry jam and some more caster sugar for good measure, but oh, they taste good. Topped with a 70g-melted chocolate-50g butter-2tsp golden syrup frosting they even survived the cycle to work with minimum fuss (and who doesn’t like scraping smudged frosting off the inside of the cake tin?).

The cupcakes are a Nigella recipe (HTBADG, p196) and I should play around with the recipe a bit more next time. Raspberry jam with milk or white chocolate perhaps? Marmalade in with the dark chocolate? So many possibilities.
