Oh blog, how I have neglected you of late. I am sorry.
How about a quick lunchtime post to make up for things?
Lunch today was potted mackerel on rosemary toast. But without the potting step, and skipping straight to the eating part.
Random fridge ingredients:
- 1 smoked mackerel (from a pack of 4 – ace fridge standby and freezes well too)
- 3 teaspoons of fromage frais
- 1 teaspoon capers, chopped
- 2 cornichon, chopped
- Half teaspoon horseradish
Remove the skin from the mackerel, and mash roughly in a bowl. Add the rest of the ingredients and a grind or two of pepper.
Toast some bread and butter it. Spread unpotted mackerel mix on toast and eat!
